Critical Issues Involved with the Development of a Restaurant Including Negotiating a Restaurant Lease

The development of a restaurant, especially in an urban environment or a mixed use property, involves many issues beyond those which typical “dry goods” retailers focus on. It is especially important to pick the right location for your restaurant and negotiate a lease which provides the flexibility, recognizes the necessary contingencies and affords protections which are critical in developing and, when appropriate, disposing of a restaurant property.

This seminar will focus on the key issues that should be considered in planning the development of a restaurant. Specifically, this seminar will cover, among other issues:

  • General business plan assumptions
  • Developing your budget including build-out and other pre-opening expenses
  • Satisfying the electrical, plumbing and mechanical issues
  • Assignment and subletting rights and the ability to sell your business
  • Determination of downside scenarios and other on-going operational considerations
  • Lease negotiations
